Yum!

The Saturday morning breakfast request was Pumpkin Pancakes, one of our fall favorites. I was trying to take this photo before my husband found out I was going to blog his breakfast and was caught by Amanda...she understood because she blogs too!




Pumpkin Pancakes

1 cup flour
1 tbs baking powder
1/4 tsp salt
2 tbs sugar
1 tbs pumpkin pie spice
1 egg
1 cup buttermilk or milk
1/4 cup sour cream, light is okay
1/4 cup canned pumpkin
1 tbs butter, melted
1 tbs vanilla

1. Mix flour, baking powder, salt, sugar, and pumpkin pie spice together in medium bowl.

2. Combine remaining ingredients in small bowl. Slowly whisk liquids into dry ingredients.

3. Oil pan and cook on medium about 1/3 cup batter per pancake, ENJOY!
